Chocolate avocado cupcakes – No eggs, no butter, no milk – Vegan friendly

Avocado is so good, tasty and healthy, got plenty of vitamins C, E, K. It’s good for digestion, for your heart, for your skin, for helping getting down bad cholesterol .. the list is so long it’s impressive.
Also, it’s the perfect substitute for baking when you have some vegan friend you just want to try something different.

So, we were talking about sweet recipes with avocado on Facebook, and it turned out I asked Stéphanie Ford to make one for us when she was having the Bcn bakers meetup.
Sadly the event doesn’t exist anymore but I did keep all the recipe and still use them.
So this special request was a recipe vegan friendly, so no eggs, no butter, no milk … but still so incredibly good, thanks to the avocado.
You should be able to bake 15 cupcakes more or less.

Ingredients :

  • 374g flour
  • 32g cocoa powder
  • 3g salt
  • 7g baking powder
  • 9g baking soda
  • 359g sugar
  • 61g unsweetened applesauce (2 apples boiled in water)
  • 1 avocado mashed
  • 473 ml water
  • 30ml white vinegar (2 tablespoon)
  • 10ml vanilla
  • Recipe :

    Preheat oven to 175C. Line cupcake pan with liners.
    In a small bowl, sift together the flour, cocoa powder, salt, baking powder and baking soda.
    In a large bowl, beat the sugar, applesauce, avocado, water, vinegar and vanilla together, until smooth.
    Gently mix in the dry ingredients until well combined.
    Fill the liners about half full.
    Bake 18-22 minutes or until a tooth pick inserted in the middle comes out clean.
    Let cool completely before serving.
    Dust with powdered sugar or top with frosting id desired before serving.
